Choc Chip Energy Balls

Ingredients

½ cup raw cocao nibs

½ cup raw Mesquite powder

1 cup dried desiccated coconut

½ cup dried cranberries

¼ cup bee pollen (optional)

¼ cup raw coconut butter

½ cup dried sultanas

¼ cup raw honey or agave syrup

Method

Blend all ingredients (except cocao nibs and cranberries) in a food processor until mixed through but not too smooth. Add the nibs and cranberries and blend for a further 15 seconds.
Roll the mixture into small balls and place on a tray lined with non- stick baking paper. Place in the freezer or fridge to set. When set, store in an airtight glass jar.

Options:
You can also roll the balls in ½ cup of desiccated coconut before placing in the fridge.

Take these balls to work or training as a snack or share as a delicious afternoon “pick me up”.
