  • 2 cups organic coconut milk
  • 3/4 cup chia seeds

Chia is a nutritional dense gluten free seed. Chia is super quick and simple to prepare.  Chia is packed with anti-inflammatory omega-3 essential fatty acids along with antioxidants that protect the seed from going rancid. It has more protein than most plant based sources and is high in undigestable fibre, making it a great choice when you are trying to stay trim and terrific!. Chia also contains lots of essential minerals such as calcium, zinc, phopshorous, manganese, magnesium and potassium and energy producing B vitamins. Chia has been shown to assist with bone building, weight loss, reducing the risk of cardiovascular disease, insulin resistance and diabetes.

Chia are super easy to incorporate into your daily diet in smoothies, on cereals, porridge, desserts  and as snacks.

Place all ingredients in a bowl for 1 minute stirring constantly. Rest for a few minutes before mixing again. Place in the fridge for 2 hours or overnight prior to serving. Add a sprinkle of nuts and seeds or fruit if you wish.

This chia pudding is an ideal afternoon “pick me up” snack and won’t cause your blood sugar to spike like other sugary rich foods will. Chia pudding stores well in the fridge and can be added to smoothies, desserts, porridge, cereals, museli bars, or enjoyed on its own.
