Main Ingredients

  • ½ cup raw cocao nibs
  • ½ cup raw Mesquite powder
  • 1 cup dried desiccated coconut
  • ½ cup dried cranberries
  • ¼ cup bee pollen (optional)
  • ¼ cup raw coconut butter
  • ½ cup dried sultanas
  • ¼ cup raw honey or agave syrup

Snack: Choc Chip Energy Balls

  • Preparation: 20 minutes
  • Cooking: nil
  • Serves Many

METHOD:
Blend all ingredients (except cocao nibs and cranberries) in a food processor until mixed through but not too smooth. Add the nibs and cranberries and blend for a further 15 seconds.
Roll the mixture into small balls and place on a tray lined with non- stick baking paper. Place in the freezer or fridge to set. When set, store in an airtight glass jar.

OPTIONS:
You can also roll the balls in ½ cup of desiccated coconut before placing in the fridge.
