Main Ingredients

  • 4 tbsps  coconut  oil
  • 2 1/4 cups  pumpkin
  • 2 cups   vegetable stock
  • 1/2 cup unsweetened almond milk
  • 1 tsp ground ginger
  • 1 tsp ground ginger
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup coconut milk
  • 1/4 cup mixed seeds (pumpkin seeds, sunflower, sesame) or fresh coriander chopped

NOT SO CREAMY PUMPKIN SOUP ( V,+ GF +DF)

METHOD:

  • Roast pumpkin in a baking tray with half the coconut oil until soft ( 20 mins).
  • Place pumpkin in a blender until creamy
  • In a large pot, heat the other half of the coconut oil  and stir in blended pumpkin, liquid stock, almond milk, ginger, nutmeg, salt and pepper.
  • Bring to a boil and let simmer for about 10 minutes. Divide the pumpkin soup into separate bowls.
  • Garnish soup with seeds or coriander.
