Main Ingredients

3 fresh medjool dates

1/2 cup  almond milk

1/3 cup sesame seeds

1/3 cup pecans crushed

1/3 cup currants

2 cups rolled oats

1 1/2 tsp baking powder

1 apple + 1/2 cup water to stew

2 tsp molasses or honey

2 large eggs

  • Preparation: 15 minutes
  • Cooking: 35 minutes at 165c
  • Serves Many

METHOD:

  1. Preheat oven to 165c. Line a baking tray with baking paper
  2. Place chopped apple in 1/2 cup water in a saucepan and cook till  soft. Stand to cook for 5 minutes before blending in the thermomix or food processor till smooth
  3. Place all dry ingredients in a bowl
  4. Whisk all wet ingredients including the stewed apple
  5. Pour wet ingredients into the dry ingredients and stir through
  6. Place mixture in the baking tray and press down till firm
  7. Bake for 35 minutes or until brown around the edges.
  8. Stand to cool before cutting into squares
